After attending Harper College, and feeling unfulfilled in the career choices ahead of her, she chose to take a management offer at Jimmy Johns. She started as an employee under Faisal Ghani in 2002 and became a manager in 2007. Before becoming a District Manager, Shannon created a number of systems and manuals to help operations within the franchise of 23 stores. As District Manager she built a strong management team amongst her 7 Northwest Suburban locations. In early 2014 she began to consult with Olive Mediterranean Grill, another restaurant concept started by Faisal Ghani.  She was inspired by the innovative and fresh approach Olive had on shaping how a restaurant is run, and peoples experience in the restaurant. So after only a month she made the decision to switch full-time to Olive.  Now at Olive she uses the skills that she has learned from the Institute to build a company with a foundation built around emotional intelligence, and to accomplish the greater goals with Olive!
